North End Baking: How a gluten-free café became a community game-changer.
When Prescott Group set out to create North End Baking & Café, the goal was simple: build a space where everyone could enjoy great food without worry. But what started as a kitchen redesign quickly grew into something much deeper—a café built around inclusion, health, and belonging.
Many people don’t know that individuals with Down syndrome are more susceptible to celiac disease. For us, that fact became a starting point. If we wanted a kitchen and café that were truly inclusive, they needed to be safe for everyone. That meant building a gluten-free and nut-free bakery from the ground up—one that didn’t just meet the needs of our community, but celebrated them.
Today, North End Baking is staffed by an incredible team, including employees with disabilities who take pride in crafting every cookie, loaf, and muffin that comes out of the oven. And the impact has been immediate and heartwarming.

There’s the grandmother who told us how good it feels to bring her celiac grandson into a café where she doesn’t have to scan for crumbs. The little girl who said she finally feels included because she can have treats “just like everyone else.” And the adults—celiac or not—who come back again and again because, quite simply, the cookies are amazing.
What we’ve learned is this: North End Baking is far more than a café or a business. It’s a community service, a safe space, and a small but powerful shift toward a world where nobody is left out.
